Pikliz


You can ask any Haitian this question " Besides rice, beans , meat and fried plantain , what is a must on your plate?" and 95% of the time the answer will be ...you guess it pikliz . It is traditionally a side dish served with fried food and it is certainly the nice kick that will make all the difference for you.  The process to prepare Pikliz is not too difficult well at least my way will curve a few minutes of tedious vegetable cutting , what vegetable with fry food ? Bare with me , you will not be sorry.  First of course , I will share the different ingredients use to make pikliz .

Ingredients 

2 1/2  cups thinly sliced cabbage, cut crosswise 2-3 times  for shorter shreds
1 cup julienned  or grated carrots  which is about a medium size carrot
1/2 cup thinly sliced  shallots which is about 1 large shallot
6 scotch bonnet peppers cut in quarters 
3 springs of thyme 
8 whole cloves 
1 teaspoon kosher salt 
3 cups  ( or more depending how  big your jar is) distilled white vinegar
3 tablespoons fresh lime juice 


Direction

In a 1 1/2 quarts mason Jar , put the cabbage, carrots , peppers , thyme , cloves and salt . Add vinegar and lime juice , seal the jar and shake  until all the ingredients are distributed and salt is dissolved. The vegetable need to be covered so you may add more vinegar . you must shake it twice daily, at least 3 days before serving .


My tips :

* you can save time from cutting by buying the already cut vegetable use for coleslaw
* you can use pickle or olive jar , no need to spend money on a new mason jar. it's all about recycling and giving things more than one use .

  1. Pikliz is one of my favorites condiments when I go to a Haitian restaurant! Definitely going to try this. About how long can I keep it in the fridge?

    1. you should wait about 2-3 weeks before you start using it as a condiment as it will give time to the ingredient to marinate and awaken that amazing spicy taste we like so much. The pikliz if put in a sealed container like mason jar can stay in your fridge for a very long time .
